Signature Pasta Salad


1 pound tri-color rotini pasta

1 pint cherry tomatoes halved

8 ounces fresh mini mozzarella cheese balls halved

1/2 - 1 cup sliced olives(optional)

1 cup mini pepperonis

1 cup salami

1/2 red onion diced

1 orange bell pepper

1 tablespoon fresh oregano, basil, thyme, parsley

Italian Dressing

1/2 cup extra-virgin olive oil

1/4 cup sugar

1/4 cup red wine vinegar

1 teaspoon lemon juice

1 tablespoon chopped, fresh oregano, basil, thyme, parsley

1/2 teaspoon garlic powder

pinch of red pepper flakes


  1. Cook pasta according to package directions.

  2. Drain and rinse with cold water until pasta is cooled.

  3. In a large mixing bowl, make your dressing by whisking together olive oil, vinegar, lemon juice, I chopped seasonings, sugar, garlic powder, and red pepper flakes.

  4. Add cooked pasta in with the Italian dressing.

  5. Toss with tomatoes, mozzarella, olives, mini pepperonis salami, pepper, and onion.

  6. Cover bowl with plastic wrap and refrigerate for 1 hour before serving

Additonal Notes

Feel free to play around with the measurements of the vinegar and sugar. Add more vinegar for a tart taste . Add more sugar for a sweeter taste . Also, please note the picture does not include all ingredients.
