Creamy Chicken & Tortellini Pasta
1 package of tortellini pasta
1 lb of chicken sausage or protein of your choice
1 cup of sliced mushrooms
2 teaspoons minced garlic
2 red peppers
1 yellow onion
4 tablespoons butter
1 cup of heavy whipping cream
2 tablespoons tomato paste
1/4 teaspoon salt
1/4 teaspoon oregano, basil, parsley, black pepper
shredded parmesan cheese
In a separate bowl, season chicken sausage. Set aside
Cook pasta according to directions. Meanwhile in large skillet, sauté mushrooms, peppers, onions, in butter. Add garlic. Sauté for an additional 2 minutes. Do not let garlic burn. Add seasoned chicken sausage.
Add tomato paste. Stir frequently . Add more butter if necessary. Let cook for 3-5 minutes. Add heavy whipping cream. Reduce heat and let simmer uncovered for 7 minutes.
Drain pasta. Serve sauce over pasta, top with shredded parmesan cheese.
Healthy Substitutions: Use almond milk instead of heavy whipping cream. Use soy ground beef instead of chicken sausage. Use chickpea lentils instead of pasta.
